My house burned to the ground on 2/22/13 - we got all the heartbeats to safety, in time, but were not able to rescue anything else, at all. If you already own this rare item, it is now even rarer as I had slightly over 200 copies in my home at the time of the fire. You will need:
Food Processor
Mixing Bowl
Whisk
Small Saucepan
Large Baking Sheet
Wax paper or (better yet)parchment paper
Pastry bag with 1/2-inch plain tip.
A lot of time and patience.
Ingredients:
6 ounces bittersweet (or semi-sweet baking) chocolate --(not morsels!)
1/2 stick unsalted butter, softened
1/3 cup heavy cream
1 Tablespoon plus 1 teaspoon instant coffee mix
pinch salt
vegetable oil or cooking spray
Steps:
- Break chocolate into very small pieces.
- Pulse chocolate and butter together in food processor until chocolate is finely chopped.
- In a small saucepan, over med. heat, whisk cream, salt and coffee.
- Bring just to a boil, then pour over chocolate mixture, in food processor and pulse until smooth.
- Move to bowl & let cool at room temperature until just firm enough to pipe (about 2 hours.)
- Oil a large baking sheet and line with wax or parchment paper.
- Pipe from pastry bag onto baking sheet to make (approx) 1 inch diameter kisses
- Chill, uncovered, until firm (overnight.)
Will keep in fridge, up to two weeks.
Makes approximately 3 1/2 dozen kisses.
